I gave him the details of my set up so don't know if this is specific to me, I don't think so.

Version 20H2. Then after that, I could go into the registry and do what you did. I find this to be an awful situation.
I'll let you know what I decide.
I don't think you have to upgrade if you don't want to. In the registry step, when you are imputing a value into TargetReleaseVersionInfo, just put in your current version of Windows that you like (20H2). When Windows Update runs, it should only pull updates for your version of Windows only.

If you decide to update to the latest version of Windows 10 later, all you have to do is change the value of TargetReleaseVersionInfo to the latest version of Windows 10 that has been released according to this help article:
https://docs.microsoft.com/en-us/windows/release-health/release-information
Then, restart your computer. Run Windows Update and you'll be able to update to the version of Windows you put in to the registry.
