Are you able to check if plugging in an ethernet cable works fine?
But also, I don't know if there's logs on Windows but EventViewer might show something to go on. It could be possible that the router log might also show what the issue is.
Routers are quite complex so unless you try a different router for wifi I wouldn't rule out a bug here from the router. They do have bugs and other issues.
Also you can test other connection types from changing how it works on the router from its browser interface like quickly trying no wifi security, different encryption/security, etc. Some incompatibilities exist that way. There's no way to know exactly how issues will manifest.
Mediatek drivers are quite decent from what I know with the chips I use from them. This is Windows 10 so I'd expect it to be quite stable. But, I'm sure someone could run into a bug. Maybe update the BIOS if you haven't as that's tied to the internal hardware.
Also possible for it to be Windows networking code. Some people have weird configurations with problems. But, I'd expect something else instead of this.
