Hello! Some of my keyboard keys are not working when my pc was updated just now.
When i tried to press shift + 2 the @key is not appearing instead (“) quote key appeared and some other keys as well.

As per the previous announcement, Windows 11 will be released for the general public starting October 5, 2021. The rollout through Windows update would start today to the eligible devices and continue until 2022.

Is there a schedule for adding more older processors?

Not the I know of, I don't think there will be any changes in the list of processors supported.
But you never know for sure, things may change, just run the latest PC Health Check to see if there is any difference in the supported processors or any other requirement.

Wrong list ! That is the list for 21H1 Windows 10, not Windows 11.
Look at the links for windows 11 in my previous reply.
Mine here is a I7-8550U and it is supported.
