Hi Charles, hope you don't mind my asking but did you get a reply or resolution from Microsoft or anyone else on this one? Exact same issue happened to myself. This is a new HP PC which I got in September. The auto update in November, wiped all my taskbar settings, MS Office history, Outlook account settings, etc. Set them all up again but then following any PC re-start they all disappear again. Photos also seem to no longer work again. I'm just a pretty regular user with no sophisticated software installed or any particular specific window 10 config in place. I did contact MS support and they said it was likely down to having anti-virus software installed on PC which sounded highly unlikely as being cause of issue! Very frustrating and not first time these Windows 10 updates have caused issues. Similar problems with previous PCs. Like you now thinking another O/S may be more reliable!

Windows 10, version 1809, will reach end of service on November 10, 2020 for devices running Windows 10 Home, Pro, Pro for Workstation, and IoT Core editions. These devices will no longer receive monthly security and quality updates that contain protection from the latest security threats. To continue receiving security and quality updates, Microsoft recommends updating to the latest version of Windows 10.
IMPORTANT
Windows 10, version 1903 will reach end of servicing on December 8, 2020. To continue receiving security and quality updates, Microsoft recommends that you update to the latest version of Windows 10. If you want to update to Windows 10, version 1909, you must use the Enablement Package KB4517245 (EKB). Using the EKB makes updating faster and easier and requires a single restart.
