When I follow the steps in the Microsoft Store to try to switch out of S mode, all I get is a message:

"Something happened and we couldn't start the upgrade"

and a Try Again button.

They won't let anyone switch out...it's to piss everyone off.

They will NEVER allow you to switch out of S mode. It's how they own your computer...not YOU.

In other words...you are SOL for opting out of S mode, no matter how many ways someone 'suggests' how you can.

One shouldn't have to do trail and error to choose how to opt out of S mode. Microsoft has it made that way to prevent you from doing so.
