Whenever I open the Minecraft launcher signed in as my Microsoft account which is my only account it will show me a message that says: "Oh no! Something went wrong, and we couldn't connect to Minecraft Services" and the Play button is replaced with a Play offline button but once I click that to play offline, it will say I need to make a profile even though I have a profile and have been playing the game until this error occurred. But once I click to create a profile, it will sign me into the Minecraft website and bring me to my account profile screen where it will give me the message: "Something went wrong... press reload to try again." and once I click reload, nothing changes. this error happened on Friday, May 28th.

Same issue for me, it said it couldn't connect to the minecraft services and I only had the option to play the demo even though I have bought minecraft long ago. My solution was to download the Win7 Version of the launcher from the minecraft website and log in with my migrated microsoft account.
For some reason on the new win10/11 launcher it doesn't work.

If this is happening with the Java launcher through the MS store then I suggest buying Java edition and installing the launcher from minecraft.net and see if that fixes anything. The reason why I suggest this is because the MS Java edition Launcher was available until just recently, so as such there might still be some bugs like the issue your having that haven't been fixed/patched yet. However the minecraft.net launcher you get from buying Java edition there will not have this issue. I've been playing through the minecraft.net launcher from buying Java edition, and haven't any issues expect for having to sign back whenever the device is restarted, but I'm pretty sure that is a security measure and not an issue.

At least I know I’m not the only one. I hope Microsoft/Mojang can fix this.

I don't think that Microsoft/Mojang will fix this. I have just installed the new launcher and it's still broken!

So I will be continuing to use the old launcher

Must be a bug. Sort of expected when new softwares (or operating systems) are released.
