When I restart my PC all of my files are gone.

Microsoft Windows 10

Version 1909 (OS Build 18363.9959)

I'm using a Patriot Scorch M2 SSD 523GB for my Windows boot drive.

I tried using the System File Checker tool.

DISM.exe/Online/Cleanup-image /Scanhealth

DISM.exe/Online/Cleanup-image/Restorehealth

But when I do

DISM.exe/Online/Cleanup-image /startcomponentcleanup

It gave me an error

PS C:\Windows\system32> DISM.exe /online /cleanup-image /startcomponentcleanup

Transaction support within the specified resource manager is not started or was shut down due to an error.

The DISM log file can be found at C:\Windows\Logs\DISM\dism.log

Move that file to another folder (your Desktop), then try running that Update Assistant again to see if you get the same error . . .

And also when I open it on my 2nd drive

Try downloading that file again, that error seems to indicate the downloaded file is corrupt and then try running it form your second drive again . ..
