This worked a treat. However, I simply rolled-back to a previous driver since mine used to work properly (started to only display in black and white).

I have my internal Camera working in B&W ever since I can remember (at least from 2016, probably since I have upgraded Win8 to Win10). None of all options I've tried solved this issue (eg. updates, delete driver...). I have just tried your suggestion of using Skype for Business which has some webcam controls I could manage with, and set it to default settings. I have now solved my long-term problem in seconds and have a coloured camera working as such.
