Rachel, here are some suggestions you can try. You said that running as administrator did not work. You already tried uninstalling and reinstalling the driver.
1- When you open Epson Scan, does it only crash if you click outside the Epson scan window? You might be able to do some scanning just by not clicking outside the Epson Scan window.
2- You might be able to access the Windows WIA scanner. Go to Control panel/devices and printers/ with the scanner switched on double click the scanner icon and use the Windows WIA scanner interface. Its not as good as Epson scan but it's something.
3- Try to reinstall the driver again using this method. With the scanner on, go to Devices and printers in Control panel. Select the scanner and right click/delete device. Switch off the scanner. Uninstall the driver software and download from the main Epson site and try installing the driver software again. Turn on the scanner when the driver software asks you to. Epson support may be able to provide special software that can completely remove the old driver.
4- A registry hack mentioned here (Make sure you back up your registry before trying this)
