Well I've finally found a way to get my V700 scanner working properly again - I resurected my old PC which runs Windows 7, downloaded the appropriate software from Epson and voila. Everything works as it should and I'm a happy chappy again.
Epson scanner will not work with latest windows 10 update
My epson perfection v700 scanner (that allows me to scan photos, negatives, documents, etc.) and that I paid over $800 for) stopped working with teh latest update two days ago. I've downloaded a new driver and other software from Epson and it doesn't work. Can I uninstall this update? I like my scanner a whole lot more than I like Windows.

2018-11-07T01:05:41+00:00 Here's a fix for the disappearing window problem:
It involves going into the registry and deleting the saved Environment for Epson Scan. On my machine this was: Computer\HKEY_CURRENT_USER\Software\EPSON\EPSON Scan\ES013D\Environment
It's mind boggling that something like this that should have a simple fix is still an issue.

You'd think that Epson would have the enough resources to tell us this and save us all a heck of a lot of time!

Yes, this really works (subject to trying again and verifying tomorrow).
How is it possible that after six months of battle the mighty armies of Epson and Microsoft were unable or unwilling to give a simple answer to a simple problem?
