Recently I have built a 3D rendering station for a client of mine. The machine runs, but crashes about once or twice a day with a BSOD (watchdog violation 1x133. Blue Screen View mentions either nvlddmkm.sys or ntoskrnl.exe as culprit.

Any help or insight on this issue would be greatly appreciated, as this issue now causes great delays in my client's workflow.

This just in - seems we're likely not going to see a driver fix from Nvidia. That leaves us with a workaround and motivation to upgrade our workstations.

Did you enable Windows Defender Application Guard? Doe the crash happen when you are using VMWARE or other Virtual Machine products?
You try them separately or disable individually via the motherboard? I don't know about Zotac but for EVGA they will take returns/RMAs on their cards as long as you put the stock cooler back on the card, even if you installed aftermarket waterblocks before. Not sure how old they are either as I know the 2080 Ti had QC issues back when first released, but if they're from December or so, I would think the odds would be pretty low for both to be bad. I can't say for certain though.
Any friends' computers you could try to drop the cards into to test? I know it's harder with waterblocks already on...

Congrats! I followed your play but with no luck. Very frustrating. Starting to believe maybe I got bad cards? I don't know. Really sucks though.
