So here's what I tried, and it seems to be working so far. (Found the answer on another forum)
- Type "Task Scheduler" in the search bar next to the windows icon in the lower left corner. A window will pop up.
- On the left hand side, click Task Scheduler Library>Microsoft>Windows>UpdateOrchestrator. Once you click on "UpdateOrchestrator", you will see a list become populated in the center upper portion of the window.
- What you want to do at this point is DISABLE "UpdateAssistant" and "UpdateAssistantCalendarRun". Voila. Windows 10 Update Assistant will be dead forever and you are free to use your perfectly working as-is PC indefinitely without interruptions.
