How do you turn off Fullscreen mode in Windows 8?

Despite all of the annoyances of Windows 8, I must say, the random "switching to fullscreen mode" is the most aggravating. . I thought I turned off full screen mode, but it keeps doing that fullscreen.... thing. It's done it -at least- 5 times while I typed this.

I just know that my screen didn't randomly go "fullscreen" for no reason when I was on crappy Vista or non-crappy Windows 7. So no, it doesn't matter what program I'm in-- with all the touchscreen settings **** off my touch pad, my NON-touchscreen laptop will randomly go into fullscreen when I'm utilizing the touch pad.
I don't know what's going on. I've spoken to several owners of NON-touchscreen Windoze 8 laptop owners, and they complain about the same thing. They basically get the same answer from Microsoft--- so our solution is that we now use a mouse with our laptop-- totally defeating the purpose of using a laptop. However, we don't get the random "Going into Fullscreen Mode press F11 to undo" fiasco when using a mouse.

I know it is not your fault personally, but it is NOT a modern interface, it is an interface from the 1980's and Windows 7 was a vast improvement over that behavior. The fact that this is acceptable or even preferred behavior in a 7" tablet DOES NOT make it acceptable or desired behavior on a 30" Monitor. Seriously guys. If I want to have a calculator for quick calculations in Windows 8 it has to fill my entire 30" Monitor, and I cannot have it on the screen at the same time as the email (or whatever) I am writing so I need to write stuff down on a bit of paper so I can copy the number into the email?

This was a huge mistake, and while I understand what you were going for, and small parts of it I don't mind, it has completely missed the mark on what people want and need from an actual working computer.
I can have up to 40 separate applications running on my Windows 7, 3 monitor PC and have no less than 10 of them visible at any given point in time. I have absolutely NO IDEA how I would pull that off on a Windows 8 machine without a lot of hacks to turn Windows 8 back into Windows 7 so kindly refrain from describing the new interface like it is an improvement. It was a mistake, and one that could cause serious damage to Mircosoft as it struggles to remain relevant.
