Your choice is pretty good, but I'd get a 6870 instead of a 5850. The 6870 is a smaller card, uses less power, out performs the 5850, and runs cooler.
The i5-2500k has an unlocked multiplier on the core and the i5-2500 doesn't. If you decided to overclock the CPU, you'd want the "K" version. The "K" series is the better CPU.
