I have tried several times to install the disk that came with my Cannon EOS Digital Camera but Windows 7 does not recognize the drivers, Windows XP did with no issues. Cannon says their old driver is compatable with Windows 7. Can anyone help?

I've had the same problem since I went to Vista, but in checking on the boards, I found an undocumented trick!!!
Turn the camera on, and go to the menu.
On the 4th menu tab select the "Communications" entry and change it from NORMAL to PTP
Plug the camera back into the laptop, wait 30 seconds, and enjoy your camera again

Which version of Windows 7 are you using? is it 32bit or 64bit as the support paper from Canon only lists 32bit as supported amd/or not supporting the EOS utility and images only viewable via the memory card http://www.usa.canon.com/app/pdf/Windows7_compatibility.pdf
If you just plug in the camera, does Windows load a basic storage driver? with this you can get to download your images from the camera to PC. You could also try with the XP driver to right click the setup and choose Run as Administrator, odd times it dos allow a driver to install.

I suggest (not tell) buying a card reader because they are very
inexpensive ($2 US or) and because I think it's the preferable way to
move pictures from your camera's SD card to your computer. If you
don't want to buy one, that's fine with me; I really don't care what
you do, so feel free to ignore any recommendations I make.
I can't fix anything in Windows, since, despite what you apparently
think, I am not a Microsoft employee. Just in case you're confused,
let me make it very clear: this isn't Microsoft you're addressing;
this is a peer support forum. We are all just users of this version of
Windows here, helping each other if and when we can. We are not
Microsoft employees (not even those of us with "Microsoft MVP" behind
our names; that's an honorary title for having provided consistently
helpful advice) except for an occasional employee.
If you want to complain to Microsoft about something, please contact
them directly. Trying to do it here is just a waste of (figurative)
breath.

THIS IS NOT A SOLUTION TO THE DRIVER ISSUE. The drivers allow you to do more than simply copy files from your camera to the computer. When installed the drivers allow you to control your camera from your computer. This feature is used for creating things like time lapse photography or for capturing lighting in an image. This solution posted here in no way addresses the driver issue. Does anyone actually have a solution to the DRIVER issue?
