Ah-ha! That's it. Thanks, Carl and Ed. Now, even when I close Edge in a current session then fire it back up, yellow folders aplenty.
O.K., to reacap what I think is the sum total of our knowledge on this bedeviling issue:
1). I suppose make sure you have the latest version of Windows 11 and Edge, correct?
2). Go to your Edge shortcut and insert the "--disable-features=msFavoritesMonolineFolder" command in the target line, being sure to leave a space between the added command and the preceding "exe."
3). In Windows (not Edge as I mistakenly stated earlier), go to Settings > Apps > Startup and disable MS Edge.
4). CTRL + ALT + DEL to get to Task Manager and shut down MS Edge.
5). Fire up Edge, and go to (Edge) Settings > System & Performance and disable "Startup boost." I also disabled "Continue running background extensions and apps when Microsoft Edge is closed," but that's just me.
Side note: Now, when I visit Windows > Settings > Apps > Startup, I no longer even see MS Edge as an option. I think that may be related to a "strange" occurence yesterday when a light green warning box appeared in the upper right-hand corner of Edge stating something along the lines of "Edge updates are ready" (or something to that effect). "Uh, oh" I thought, "The Edge police don't like what I've done thus far." I selected it anyway, the screen briefly refreshed (not a typical download), and then I moved on to today. Could it be that I trained Windows and Edge on how to behave? Heck, I don't know -- all I know is that I agree with everyone else in this thread who thinks: a). the monoline look is terrible for the favorite folders; and, b). Microsoft should provide options for customizing the folders (and several other things, imo).
Hi Ed. Carl gave me further guidance on where to find your option -- an option which, yes, is in part, if not entirely, the solution. I'm not sure if I properly followed the logic of "replies" with my latest post, which is now at the end of the thread (I think - Ha!).

Bummer. Did you include "Windows > Settings > Apps > Startup" and deselect Microsoft Edge?
