When I add text to a pdf in edge, suddenly it it adding a box around the text. It doesn't show up until I hit enter. It's super annoying and I'm sure I did something to turn it on but I can't figure out how to turn it off.

That worked for me as well. Took a little bit to find the Settings page, as it opened in a new tab.

You can try to change the PDF Viewer, which can effectively solve the problem you are currently encountering.
Open edge.
Type edge://flags in the address bar and press Enter.
Search keyword 'New PDF Viewer'
Change Default to Enabled

I too have the same issue. I have enabled and disabled, reset etc. My text disappears. By the 3rd attempt I can get it to stick and save the pdf. Then when I re-open I get a blank grey screen - ie no longer can see the PDF.
The solution from Microsoft to NOT USE Microsoft is hilarious! Anyway cannot change as also a work computer. Please find a solution that works.
