Please note, If you have installed all the latest Windows updates available for you computer ( both cumulative & Feature updates), the uninstall button is available ( enabled) for Edge.
Windows settings > Apps > Edge > click on it > Uninstall
If still the uninstall button grayed out, no worries, it would be available soon for you.
You could manually remove new Edge and restore old Edge by following the below steps for you.
Step 1: Open Command Prompt on your computer in Administrator mode. For this, just search the term “cmd” through Start Menu and right-click on the Command Prompt and then select “Run as Administrator” option.
Step 2: In the command prompt, enter the following command:
C:Program Files (x86)MicrosoftEdgeApplication83.0.478.58Installer
Step 3: Now, type the following and hit enter:
setup.exe –uninstall –system-level –verbose-logging –force-uninstall
Once the command is executed, you will notice that the new Chromium-based Edge browser has been removed from your computer.

Just a note. They have installed the new Edge under the latest cumulative update. It seems no matter what you do they are forcing it. As well I have seen that even if you run the hide updates tool the new Edge keeps showing up. I believe each time you boot the PC it resets the flag so you would have to run it each time. So for now I have given up on preventing the new edge however if you use the option that adds a key to allow side by side of both Legacy and Chromium Edge you can just let them install it. All you need to do is ensure you have added the registry keys noted in other posts to allow a side by side. Then remove the desktop and task bar shortcuts of the new Chromium edge. Then add the Legacy Icon shortcut from the start menu to the desktop and task bar. This way its easy to use the old legacy Edge and the new Chromium Edge exists but only on the start menu which is fine as you can then ignore it.

At present, the situation to run Edge chromium and Edge old (Legacy Edge) is not available.
Because, Edge chromium is an update to the old edge (Legacy Edge).
I mean it is same application and if we install Edge chromium on a computer, it would be an update to the existing application ( Legacy Edge).

In normal, either Legacy Edge or Edge chromium can be run at side by side.
The steps are below,
Open start menu or search and type Group Policy Editor.
In the Group policy Editor, navigate to computer configuration.
Under Computer Configuration, navigate to Administrative Templates > Microsoft Edge Update > Applications. Under Applications, select "Allow Microsoft Edge Side by Side browser experience.

If you use regedit and install the key to allow side by side 'allowsxs' you can have both on your PC. Then you can run either or just legacy. However, now it appears they keep putting Chromium Edge on the task bar even though you say unpin it. They are if nothing else persistent
