Your information got me back to Edge Legacy. I am usually not one to download stuff since I got a virus doing that one time, but I was so frustrated with this new Edge I decided to give it a try. It was a simple fix, unlike some of the other suggestions. I will be keeping the Revo Uninstaller, in case the "new" Edge comes back. Thanks for the help.
Really missing the Surface pen stuff (pressure sensitive, not drawing using finger, marking up text), and DOUCHEBAG MOVE M$ to make it impossible for some to revert and uninstall without installing Windows from scratch.
In addition to the solutions given above. I just want to add 1 particular scenario which is for developers or ticklers who has Edge Beta and somehow Chromium Edge was still installed to replace Edge legacy.
On my Surface Pro 7 (Windows 1909), I have Edge Beta 84 installed. I maintained Edge Legacy (& IE11) because some corporate websites supported Legacy Edge but don't support Chrome.
This morning when I installed the Tuesday Cumulative update, KB4559309 Edge Update was installed alongside.
When I tried to uninstall using the instructions here & reboot. Nothing happened.
This is because Edge Beta 84 was still installed. Upon going into the Registry I found the Edge SxS registry key is not there anymore. No idea why though...
So I went back here to create the Reg Key & DWORD. Run the command to uninstall Edge Stable 83, REBOOT, and Edge Legacy reappeared! Yay! :D

If the new Edge was installed via the Update and KB article you cant uninstall it the normal way. You have 2 options go find your restore points and one should have been created for the date the update was applied. Then restore your system to that restore point and it will be gone. Also run the 'hide update tool' to hide this update. You can also create the registry entries to allow a side by side install of both the new edge and the legacy edge.

When I did this, Microsoft does NOT allow to uninstall Edge Chromium. How do I revert to the older version before Chromium??

I only recommend you to restore Legacy Edge if your work is affected by the missing features. Please note that Legacy Edge is a deprecated browser.
Also, It is advised to create a system restore point before you execute the steps.
