Where is the Windows Ink feature? I use/used the ink markup of a web page in the legacy Edge all the time. I can't find it anywhere in the new Edge.

unfortunately, inking on websites is one of the many features that are not (yet) available in the new edge chromium.
you can make the suggestion to the feedback team, from within edge Alt+Shift+I, the more users that want this feature the more likely that Microsoft will add it.

Inking in web pages would be available by end of the September in the Dev/Canary branches of Microsoft Edge. Expect more information about the stable release in the future.

You mean because Edge doesn't yet have full inking, you're leaving it for another browser that doesn't support any inking? I use Firefox too, and it has some unique features I really like (e.g., the Live Bookmarks for RSS feeds), but if Inking is your preferred feature, Edge is the best bet as of now, even if it's going to be even better for inking in the future than it is today.
I'm not leaving Edge and don't plan to, but what I am going to do is continue to use Edge Legacy (the not New Edge) as my primary browser. New Edge (also known as Edge Chromium) does have capabilities that Edge Legacy does not, although the only ones I have found so far that I care about is requirements for some videoconferencing sites such as Google Hangouts & Zoom (although my preference would have been to use Skype, but since I wasn't the host, I had no choice). Aside from Inking & the general UI, I have also noticed that Edge Legacy does a much better job for viewing PDF files, which we all know are sometimes a very important component of the Internet. So I'll be here when Edge Chromium does become user friendly & adds the features I want, but until then it will be second place.
