Edge version 97.0.1072.62 contains the fix and will be installed per your regular update policies over the next day or so. If you'd like to force the update immediately, you can head over to edge://settings/help in the address bar or Settings > About Microsoft Edge and trigger the update manually.
If you've made any registry edits or GPO changes as mitigation, you can revert those after the update!
I had to fix it, I can't let it be knowing it is wrong. The Autoruns method seems to work for a few, I would try that rather than letting it run minimized.
Had the same problem, starting a few days ago. I checked and already had this turned off: Automatically save my restartable apps when I sign out and restart them when I sign in.
In the task manager the tab "Startup" showed a new entry: Cortana, which was enabled. I disabled it, and rebooted my PC. Edge did not start up automtically this time.

Back on topic, there is a tool from SysInternals (now in Microsoft) called "Autoruns".
You have to be careful what to disable naturally but there are a lot of older software apps that may be calling something that causes Edge to load at start up / log in.
I even found this article 2 Ways to Stop Microsoft Edge From Loading at Startup on Windows (partitionwizard.com) & going into GPO's still didn't work.
There is no reason that this should be occurring & to stop it should be straight forward.

Tell them is is NOT helpful & submit & give them an earful for them to finally address this responsibly.
They have taken what has been a relatively strong & stable browser & are step by step making it unusable again.
