Try this:

go to Settings>Apps>Installed apps>Microsoft store. Then go to Reset and click on Reset.

Well actually, my final goal is to completely leave the insider program. I don't even know if that's even possible to do without a complete OS re-install at this point.

If you want to go back to the current public build 22000.778 you will need to reinstall, if you just want to get out of insider and stay with 22621 till it goes public then it is a different case.

I don't have a way to backup my files at the moment, but I'll see what I can do, thanks for the advice.
Also - is it possible than an organization account, on my device, can be preventing me from unenrolling? That's the only issue I guess is possible to spot from the outside, as I have a couple on my laptop (signed in as microsoft organization accounts)
