I'm opening emails and Outlook and it is not being counted or accounted for in the rewards. As for this morning, I've opened up 6 /6 emails and none have been rewarded so it's still 0/ 3.

Get them fast. I got them and got out and then they put me in again even though I was doing slow.
There are plenty of proper searches that you can do in a day that go fairly quickly. I often do today's birthdays and get a ton of results. Movies that a specific actor is in, musicians for a specific type of music. Today is day 2,543 for my streak, and I have never had any problems keeping it. I do actually spend time on each page and read it though, and I often learn cool stuff. Only takes a few seconds, which is required to get the points now anyway. I do it randomly throughout the day rather than trying to focus on getting them all done at once.
The email reading has only been out for a couple of months, so the most recent Edge update might have broken it. Seems to coincide for me.

Hmmm, it's possible, but would it only effect the email points? I'm still earning all the points in the other areas.
How do you do your searches? Do you do "Real" searches or are you doing them really fast? If doing them really fast, then you are probably in the Microsoft jail. It happened to me. They only let you do 3 or 4 searches every 15 minutes. It takes about a week to get out if you do proper searches.
