Dan nice to see this works for others, maybe this will give some insight for MS Support to figure out a fix.
One further thing I tested that seems to work...
I noticed when connecting in my car at first the indicator for speech recognition was showing (listening for commands) and I had an exit option which I did and the audio was fine.
This made me think what if when its cutting off audio its because it has switched from Media to Phone mode for listening for commands.
So I re-toggled on Phone Calls again on my Earphones, waited to have the issue, then when it went dead air I tripple tapped my earbuds (Voice Assistant command) and immediately sounds returned.
The above tells me what's actually happening is the phone is listening to the Mic on the earbuds when its dead air, triggering the Assistant Command shuts it off instead of turning it on because its been silently tripped on.
This is just my theory but I am an IT guy with lots of tech background and a good troubleshooting skills... hopefully MS can fix this cause its super annoying.
