This sucks, I have the same problem.
Surface 128Gb, Windows 8.1 preview (was the same with 8.0) and MS Touch Sculpt mouse.
My network is N, not G.
Sure would be nice to have a fix Microsoft, given I just blew over 1K on your fancy new hardware..

Recently bought the Surface Pro 128GB.
Having been annoyed by the temperament of the touchpad, I bought a Microsoft Bluetooth mouse.
What I've found is that, when copying data over a network, the bluetooth mouse begins to lag.
Using the touchpad/pen is unaffected.
Makes me wonder whether the Wireless NIC and Bluetooth Module are using the same bus and/or whether this is a known issue.

So I recently did a fresh install of Win8.1 - Completely fresh, no update etc.
Bluetooth lag still exists, along with a new issue of every few hours, the Wireless Nic/Bluetooth completely dropping out and requiring a restart for it to power again.
Hibernate/Turn device off/Power Saving options are all turned off.
Putting it quite simply, its f***ing annoying!
Having the same problem with 8.1.
Surface loses Bluetooth and WLan connection periodically and nothing but a restart is fixing this.
Of course the mouse/keyboard lag persists and ALSO im now having the problem when copying over WLan as mentioned in the beginning of this thread.
It keeps getting worse instead of getting fixed!
I'm having the same problem on my Surface Pro 128GB with the wedge touch mouse. Horrible lag when copying files to the network on WiFi.
I also have problems with the BT mouse losing connectivity. I have to slide the battery cover on and off to get it working again.
Please provide a fix Microsoft. Thanks
Can someone at Microsoft please respond to this?
Its not going away and from what I've seen, the issues are also going to occur in the Surface Pro 2 as it uses the same chipset.
