I have quite a few fillable PDF forms that you can enter information into on laptops/desktops but won't work on Surface Pros - is there a way to do this?

This is a case where you need the 'real thing'.  Go to adobe.com and scroll to the bottom of the main page and look for "Acrobat Reader Air" and install it.  Use it to open your PDFs to use the "form fill" function.

You can save the data and print as well.
