I have the power settings set to NOT restart when the power is plugged in and NOT to go into sleep mode.
Even with these settings the laptop restarts randomly. I'll be writing code and it restarts. Its random.

We published new improvements and fixes for Surface Laptop 3 that improve device stability. You can get updates now by checking Settings > Update & Security > Windows Update. We recommend that you install these updates to keep your Surface performing its best.

I set up a repair order, sent it in, and they replaced it with a new device that does not suffer from that issue.
And I still have my 15” screen.
I tried that with no success.
ahh I see, I've been told to perform a USB recovery and reinstall windows as its a windows bug, anyways glad its worked for you
Yeah I returned it before the 30 day window and bought the intel version. The screen is 13inch but at least it doesn’t randomly shut down!
