I run Windows 10 Pro on my Surface Pro 7 (i7, 256Gb, 16Gb) with no problems. I had random shutdowns when I first purchased the device, but these were resolved entirely with the 2004 Window 10 update. Mostly they occurred while the device was asleep, not while I was working. I usually have the power mode set to "Recommended" or "Better Performance" (not "Best Performance"), though, to reduce fan noise.
Point being, I don't believe downgrading to Windows 10 Home will resolve this problem. I would say that either there is a problem with your Windows installation, which may be resolved with a refresh/clean install. Or third-party software you're using is causing the system to crash. Or third-party hardware you're using is causing the system to crash. Or your device is faulty and should be replaced by Microsoft.
